Place the chopped kale in a large bowl. Add a small squeeze of lemon juice and gently massage the kale for 1–2 minutes until it becomes slightly darker and more tender.
Add the avocado, parsley, lemon juice, garlic, olive oil, salt, pepper, and 3 tablespoons of water to a blender or food processor.
Blend until smooth and creamy. If needed, add additional water 1 tablespoon at a time until the dressing reaches your desired consistency.
Add the romaine lettuce, cucumber, green onions, and tomatoes to the bowl with the kale. Pour the dressing over the salad and toss until everything is evenly coated.
Serve immediately or chill for 15–20 minutes before serving for even more flavor.
