Prosciutto Mustard Green Flatbread with Balsamic Honey

This Prosciutto Mustard Greens Pizza is a rustic homemade pizza topped with salty prosciutto, peppery mustard greens, and melty mozzarella, finished with a sweet honey balsamic glaze.

Ingredients
  

Flatbread Dough
  • tsp active dry yeast (or 1 packet)
  • 1 tsp honey
  • ¾ cup warm water 105-110℉
  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1 Tbsp olive oil
Toppings
  • 3-4 cups chopped mustard greens
  • 2 cloves garlic minced
  • 1 Tbsp olive oil
  • 1 tsp salt
  • 6-8 slices prosciutto
  • 1-2 cups marinara sauce
  • 8-12 oz fresh mozzarella
Balsamic Honey
  • ½ cup balsamic vinegar
  • 2-3 Tbsp honey

Method
 

Make flatbread pizza dough
  1. In a bowl, combine warm water, sugar, and yeast. Let sit 5–10 minutes until foamy.
  2. Add flour, salt, and olive oil.
  3. Add bowl to electric stand mixer with dough hook attachment. Mix on low speed for 6-8 minutes until a dough forms that's smooth and elastic. 
  4. Place in an oiled bowl, cover, and let rise in a warm place for 1–1½ hours until doubled in size.
Make balsamic honey glaze
  1. In a small saucepan, simmer balsamic vinegar over medium-low heat until reduced by about half (8–10 minutes).
  2. Stir in honey and a pinch of salt. Let cool in fridge, it will thicken as it sits.
Sautee mustard greens
  1. In a skillet over medium heat, add olive oil and garlic. Cook until fragrant (about 30 seconds).
  2. Add mustard greens first and cook 2–3 minutes until they soften.
Build flatbread and bake
  1. Preheat oven to 450℉.
  2. On a lightly floured surface, roll out flatbread dough evenly into a rectangle to fit your sheet pan.
  3. Lightly oil your sheet tray and transfer dough to the tray.
  4. Evenly spread marinara sauce on dough. Spread mozzarella on top, then evenly place sautéed mustard greens and prosciutto slices.
  5. Bake 12-15 minutes until crust is golden and cheese is bubbly and browned.
  6. Let flatbread cool slightly and cut into 6-8 slices.
  7. Drizzle balsamic honey glaze over flatbread and finish with optional red pepper flakes. Serve warm.
