  • 1 lemon juiced
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp dried dill
  • ½ tsp dried parsley
  • 1 tsp chopped chives
  • Salt and pepper to taste

Method

Fry crispy cauliflower bites
  1. In a pot, heat avocado oil for deep frying.
  2. In a small bowl, whisk flour, water, spices, salt, and pepper into a smooth batter.
  3. Toss cauliflower florets until well coated.
  4. Fry cauliflower bites until golden brown and crispy.
  5. Drain oil on a rack or paper towel.
Prepare sweet habanero sauce
  1. Preheat oven to 425℉. Prepare a baking tray with foil or a baking rack.
  2. Heat olive oil in a saucepan over medium-low.
  3. Sauté minced habanero and garlic for 30 seconds until fragrant.
  4. Add honey, sweet chili sauce, vinegar, lemon, and lime juice.
  5. Simmer 5–7 minutes until thick and glossy.
  6. If too loose, make a cornstarch slurry and add 1 tsp at a time. Bring sauce to a simmer to thicken.
  7. Toss baked cauliflower in warm sauce until coated.
  8. Bake in oven for 5-8 minutes to caramelize.
  9. Remove from oven and keep warm.
Make ranch dipping sauce
  1. Whisk all ingredients together in a bowl until smooth and creamy.
  2. Adjust consistency with more buttermilk or milk if needed.
  3. Optional: Chill for 15-30 minutes to let flavors develop.
  4. Serve sweet habanero cauliflower bites warmed with ranch chilled. Garnish with chives and lime wedges.
