Sweet Potato Pie Oatmeal

Ingredients
  

  • ½ cup rolled old fashioned oats
  • 1 cup milk of choice
  • ¼ cup roasted and mashed sweet potato
  • 1-2 Tbsp brown sugar
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • Pinch of ground ginger
  • Pinch of ground cloves
  • ½ tsp vanilla extract
  • Pinch of salt
  • 2 Tbsp vanilla yogurt optional, for topping
  • Maple syrup optional, for topping

Method
 

  1. Clean and pierce a sweet potato with a fork. Wrap in foil and roast for 1 hour at 350℉ until soft. Let cool completely.
  2. In a small saucepan, add oats, milk, mashed sweet potato, maple syrup, cinnamon, nutmeg, ginger, cloves, vanilla, and salt. Stir to combine.
  3. Bring to a gentle simmer over medium heat, then reduce heat to low. Cook for 6-8 minutes, stirring occasionally, until the oats are soft and creamy.
  4. Add an extra splash of milk if needed to reach your desired consistency.
  5. Spoon into a bowl and serve with a dollop of vanilla yogurt, a drizzle of maple syrup, and a dash of cinnamon. Serve warm.
