Sweet Potato Black Bean Hash

This Sweet Potato Black Bean Breakfast Hash is a hearty, flavor-packed way to start your morning. Roasted sweet potatoes, black beans, seasoned and oven baked.

Ingredients
  

  • 2 large sweet potatoes peeled and large diced
  • 1 small yellow onion diced
  • 2 Tbsp olive oil
  • 1 Tbsp garlic minced
  • 1 tsp seasoning salt
  • ½ tsp black pepper
  • ½ tsp smoked paprika
  • ½ tsp thyme
  • ½ tsp cumin
  • 1 can black beans rinsed

Method
 

  1. Wash and peel your sweet potatoes, then cut into large cubes and add to a large bowl.
  2. Dice yellow olin and add to bowl with sweet potatoes. Add minced garlic and seasoning to the bowl.
  3. Rinse your black beans in water and drain, shake dry and add to bowl with vegetables.
  4. Add olive oil to bowl and mix all ingredients together.
  5. Add sweet potato and black bean mix to a parchment paper lined sheet stray and bake at 350℉ until sweet potatoes are fork tender (about 20 minutes).
  6. Serve hash with avocado, fried egg, or green onion garnish.
