Ingredients
  

  • 1 cup protein pancake mix (I used Kodiak Cakes)
  • ¾ cup milk of choice
  • 1 large egg
  • 2 Tbsp molasses
  • ½ tsp ground ginger
  • ½ tsp cinnamon
  • ¼ tsp cloves
  • ¼ tsp nutmeg
  • ½ tsp vanilla extract
  • Pinch of salt
  • Butter for pan

Method
 

  1. In a large bowl, mix together the molasses, milk, egg, and vanilla.
  2. Add in protein pancake mix, spices, and pinch of salt. Mix but don't overtax (a few lumps are fine).
  3. Let the batter sit for 2-3 minutes to thicken.
  4. Heat a skillet over medium-low heat with butter.
  5. Scoop ¼ cup of batter and let cook until edges start to brown and bubble (about 2 minutes per side).
  6. Serve pancakes warm with tabs of butter, a dollop of whipped cream, cinnamon, and maple syrup.

    For the pancake recipe I wonder if I substitute almond flour for Kodiak flour if would lose the fullness of the pancake. After all almond flour is a much lighter option. Your thoughts?

    • Good question! You’re right, almond flour is lighter than a protein pancake mix. If you want to use almond flour instead, I recommend doing 3/4 cup almond flour and 2 eggs instead of one. It will have a different texture to it than using a protein pancake mix, and won’t be as filling. Let me know how it comes out!
