Method
- In a large bowl, mix together the molasses, milk, egg, and vanilla.
- Add in protein pancake mix, spices, and pinch of salt. Mix but don't overtax (a few lumps are fine).
- Let the batter sit for 2-3 minutes to thicken.
- Heat a skillet over medium-low heat with butter.
- Scoop ¼ cup of batter and let cook until edges start to brown and bubble (about 2 minutes per side).
- Serve pancakes warm with tabs of butter, a dollop of whipped cream, cinnamon, and maple syrup.
