Fill a frying pan ¼-½ inch filled with avocado oil. Heat your avocado oil on medium to medium low heat.
Lay out your tortillas and smear a thin layer of guacamole on the bottom.
Layer your shredded cheese, halved breakfast sausage, hash brown portion, and small amount of scrambled eggs in the center of the tortilla.
Roll the tortilla lengthwise to enclose the filling and leave the ends untucked.
Leave the tortilla seam-side down so it does not unravel.
When frying oil is heated, carefully add your taquitos seam-side down into the frying pan.
Let cook for 1-3 minutes until crispy and golden brown, then carefully flip taquito to the other side.
Once both sides are golden brown, remove from the pan and drain on a rack or paper towel.
To make the cilantro lime sauce, add the sour cream, cilantro, and lime juice to a blender.
Blend ingredients on high until completely smooth. Transfer it to a small serving bowl.
Serve breakfast taquitos warm with cilantro lime sauce on the side.
