Breakfast Taquitos

This is one fun way to serve breakfast in the morning that’s great for meal prepping, grab-and-go’s for work or school, and can be made however you like! My Breakfast Taquitos are filled with savory breakfast sausage, fluffy scrambled eggs, crispy hash browns, creamy guacamole, and melted cheese. All wrapped up in a variety of small tortillas and fried in avocado oil until perfectly crisp.

One of my favorite parts of this recipe is using three different varieties of tortillas, and make sure you’re getting the ones that won’t tear on you! I used a corn & wheat tortilla, a whole wheat tortilla, and a white flour tortilla all from Maria and Ricardo’s Tortillas. Each tortilla crisps slightly differently while being fried, creating a mix of soft and crunchy bites that made every taquito feel unique.

The filling is simple and can be substituted with your breakfast favorites. Maybe you want bacon instead of breakfast sausage, or veggies instead of hash browns. I chose to make this as convenient as possible and got the hash brown patties from the frozen section of the grocery store. Airy fry the hash browns until crispy, while you bake your breakfast sausage and scramble your eggs. Add a layer of guacamole for the creaminess and the cheese for the melty gooey texture.

To finish, I made an optional creamy cilantro lime sauce that’s bright, tangy, and fresh. The combination of sour cream, lime juice, and cilantro added to a blender until smooth. This sauce cuts through the richness of the taquitos and adds a fresh element to it. It’s simple to mix together and worth the extra few minutes. But feel free to have your taquitos with maple syrup, guacamole, salsa, or on its own!

This recipe came together as a way to turn classic breakfast ingredients into something fun, shareable, and easy to prepare ahead of time. Whether you’re feeding a crowd for brunch, meal prepping for the week, or just want something a little different from the usual breakfast sandwich, these taquitos can be created with whatever your heart desires to fill you up in the morning.

Breakfast Taquitos

These crispy Breakfast Taquitos are filled with hash browns, breakfast sausage, scrambled eggs, guacamole, and melted cheese, all rolled in tortillas and fried until golden and crisp. Served with an optional creamy cilantro lime sauce, they’re perfect for meal prep or an easy handheld breakfast.

Ingredients
  

Breakfast Taquitos
  • 12 small tortillas
  • 5-6 eggs scrambled
  • 4 hash brown patties cut into thirds
  • 6 breakfast sausage links cut in half lengthwise
  • ½ cup guacamole
  • ½ cup shredded cheese
  • Avocado oil for frying
Cilantro Lime Sauce
  • 1 cup sour cream
  • 1 bunch cilantro
  • 3 limes juiced

Method
 

  1. Fill a frying pan ¼-½ inch filled with avocado oil. Heat your avocado oil on medium to medium low heat.
  2. Lay out your tortillas and smear a thin layer of guacamole on the bottom.
  3. Layer your shredded cheese, halved breakfast sausage, hash brown portion, and small amount of scrambled eggs in the center of the tortilla.
  4. Roll the tortilla lengthwise to enclose the filling and leave the ends untucked.
  5. Leave the tortilla seam-side down so it does not unravel.
  6. When frying oil is heated, carefully add your taquitos seam-side down into the frying pan.
  7. Let cook for 1-3 minutes until crispy and golden brown, then carefully flip taquito to the other side.
  8. Once both sides are golden brown, remove from the pan and drain on a rack or paper towel.
  9. To make the cilantro lime sauce, add the sour cream, cilantro, and lime juice to a blender.
  10. Blend ingredients on high until completely smooth. Transfer it to a small serving bowl.
  11. Serve breakfast taquitos warm with cilantro lime sauce on the side.
