And you can adjust the sugar to make it as sweet as you like your cheesecake to be.

I love this recipe because it doesn’t require turning on the oven and combines rich brownie cookies, a smooth homemade cheesecake pudding, and fresh raspberry preserves. It’s all layered together for a dessert that’s equal parts indulgent, sweet, and refreshing.

While it may be tempting to go to the store and get the pre-made no bake cheesecake tub, this simple homemade cheesecake mixture is creamy, lightly sweet, and balanced with tangy cream cheese. We also make the raspberry jam from scratch using only 3 ingredients! The swirl effect adds a pop of color and a fresh, slightly tart contrast that keeps the dessert from feeling too heavy. And you can choose to share this with your loved ones for Valentine’s Day or keeping it all to yourself.

The only store bought pre-made item I am using in this recipe are the brownie cookies. I found soft baked brownie cookies but if you want to add I a crunch brownie cookie or even using biscoff cookies like the original, go right ahead. The cookies adds texture, giving you those fudgy chocolate bites throughout each layer. But with the cookies already made it makes this dish super quick to assemble.

What makes this dessert especially nice is that it can be made ahead of time. After chilling, the layers set into a creamy, scoopable dessert that tastes even better after a few hours (or overnight) in the refrigerator. Finish yours with extra raspberry drizzle, fresh berries, brownie crumbles, or whipped cream.

Ingredients
  

No Bake Cheesecake
  • 16 oz cream cheese softened
  • 1-1½ cups heavy cream or milk
  • ½-¾ cup powdered sugar (more sugar if you like yours sweet)
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1 tsp lemon juice
Raspberry Preserve
  • cups fresh or frozen raspberries
  • 2 tbsp sugar
  • 1 tsp lemon juice
  • Store bought brownie cookies

Method
 

Make the raspberry preserve
  1. Add the raspberries, sugar, and lemon juice to a sauce pan.
  2. Cook over medium heat, stirring and lightly mashing berries.
  3. Simmer for 8-10 minutes until thick and jammy.
  4. Cool completely (it will thicken more as it cools).
Prepare the no-bake cheesecake
  1. Beat cream cheese until completely smooth.
  2. Add powdered sugar, vanilla, salt, and lemon juice. Mix well.
  3. Slowly stream in heavy cream while beating until thick, creamy, and pudding-like.
  4. Chill in your serving bowl for 20-30 minutes to fully set.
Assemble raspberry brownie cheesecake
  1. Dollop small spoonfuls of the chilled raspberry preserve on top of the chilled and set cheesecake.
  2. With a toothpick, swirl raspberry preserve into cheesecake.
  3. Take brownie cookies and emerge into cheesecake.
  4. Top with brownie crumbles, fresh raspberries, or whipped cream.
  5. Chill cheesecake for a few hours or overnight to let the brownie cookies soften. Scoop to serve, and serve chilled.
