I used an overripe banana for this dish but it’s not required to make this banana foster delicious, your banana can be in any ripeness condition. Caramelize them with brown sugar and butter the rich sauce begins to form. The oats will absorb all of that flavor once added to the pan.

Banana Foster Oatmeal

- Heat a small skillet or saucepan over medium low heat and melt your butter.
- Sprinkle brown sugar over melted butter and add sliced bananas in a single layer.
- Caramelize the brown sugar and bananas over medium low to low heat for 4-5 minutes, do not flip or touch.
- In a small bowl, add rolled oats, cinnamon, nutmeg, salt, vanilla extract, and milk.
- Mix oatmeal together well and pour over the banana foster.
- Spread the oatmeal out evenly in the pan and allow it to cook, do not stir.
- Once oats have absorbed milk and cooked through, remove from heat.
- Serve banana foster oatmeal by scooping out oatmeal and flipping into a bowl to reveal the caramelized bananas. Serve warm.
