Wash, peel, half, and core your pears. Lay them flat in a large baking dish.
In a small bowl, soften butter and mix with honey, vanilla, cinnamon, cardamom, ground ginger, nutmeg, and ground cloves.
Mix paste until evenly combined and brush both sides of pears with chai spice mix.
Cover baking dish in foil and bake at 350℉ for at least 20 minutes. Remove foil and continue baking until golden brown and for tender (another 20-25 minutes).
For the graham cracker crumble, mix graham cracker crumbs, melted butter, honey, cinnamon, and salt.
Layer graham cracker crumble mixture evenly on a baking tray lined with parchment paper. Bake at 350℉ for 8 minutes and let let cool completely.
Serve chai spiced baked pears warm with ice cream and top with honey graham cracker crumble.
