Add the ground turkey, minced chipotle peppers, adobo sauce, scallions, garlic, cumin, smoked paprika, oregano, salt, pepper, Worcestershire, mayonnaise, and crushed crackers or breadcrumbs to a bowl.
Use your hands or a fork to combine everything until just incorporated. Don't overwork the turkey or the burgers can become dense.
Divide the mixture into equal portions and form into patties about ¾-inch thick. Make a small indentation in the center of each patty with your thumb, this helps them cook evenly without puffing up.
If you have time, refrigerate the patties for 15–20 minutes. This helps the turkey burgers hold together.
Heat the olive oil in a large skillet or cast-iron pan over medium heat.
Add the burgers and cook for about 5–6 minutes per side, or until browned and cooked through.
Add the butter during the last minute if you want extra browning and richness. Ground turkey should reach 165°F internally.
During the last couple minutes of cooking, toast your buns cut-side down in the skillet until golden. Add lettuce and your favorite toppings. Serve warm.
