Remove firm tofu from package and discard liquid and package. Dry and press your tofu with paper towel, then cut into large cubes.
Add tofu to a bowl and toss with seasoning and cornstarch until evenly combined.
Put one layer of coated tofu into air fryer, spray with cooking spray, and air fry until crispy. Check periodically to shake the tofu.
For the vegetable fried rice, add your day old cold rice to a pot with the soy sauce, sesame oil, and frozen vegetables. Cook on stove top until heated through.
Serve and finish with chili oil or scallions.
