Crispy Tofu Vegetable Fried Rice
This crispy tofu vegetable fried rice is a quick, veggie-loaded comfort dish with golden tofu bites and seasoned fried rice with flavor in every bite.

Method
- Remove firm tofu from package and discard liquid and package. Dry and press your tofu with paper towel, then cut into large cubes.
- Add tofu to a bowl and toss with seasoning and cornstarch until evenly combined.
- Put one layer of coated tofu into air fryer, spray with cooking spray, and air fry until crispy. Check periodically to shake the tofu.
- For the vegetable fried rice, add your day old cold rice to a pot with the soy sauce, sesame oil, and frozen vegetables. Cook on stove top until heated through.
- Serve and finish with chili oil or scallions.
