Whether you’re trying to clean out your pantry and freezer with extra rice and vegetable medley, or looking to make meal prep for the week, or create a quick weeknight dinner, fried rice is always a reliable option. This version is perfectly seasoned fried rice that is topped with juicy tofu that’s golden brown.

When prepared properly, tofu develops a golden, crunchy exterior while remaining tender on the inside. It adds plant-based protein and heartiness that makes this dish filling enough to serve as a complete meal. Even those who are hesitant about tofu are often surprised by how much they enjoy it once it’s cooked until perfectly crisp.

I used a frozen vegetable medley with green beans, corn, carrots, but you can always use fresh vegetables that you have to use up. You can add in peas, bell peppers, broccoli, onions or whatever vegetables you have available. Fried rice is one of my favorite ways to incorporate more vegetables into a meal because they blend seamlessly into the dish while adding flavor and variety.

Crispy Tofu Vegetable Fried Rice

This crispy tofu vegetable fried rice is a quick, veggie-loaded comfort dish with golden tofu bites and seasoned fried rice with flavor in every bite.

Ingredients
  

Crispy Tofu
  • 2 packages firm tofu
  • 1 Tbsp seasoning salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ cup cornstarch
  • ½ cup flour
Vegetable Fried Rice
  • 3 cups cold cooked rice day old
  • 3 Tbsp soy sauce
  • 3 Tbsp oyster sauce
  • 1 Tbsp sesame oil
  • 1 cup frozen vegetables
  • 1 Tbsp minced garlic

Method
 

  1. Remove firm tofu from package and discard liquid and package. Dry and press your tofu with paper towel, then cut into large cubes.
  2. Add tofu to a bowl and toss with seasoning, flour, and cornstarch until evenly combined.
  3. Heat a large skillet with oil. Check the temperature by placing a little dash of the flour/cornstarch mix to sizzle. Oil should not be smoking!
  4. Deep fry tofu on both sides until crispy and golden brown. Remove and drain on paper towel or rack.
  5. For the vegetable fried rice, heat up sesame oil and cook vegetable medley for a few minutes.
  6. Add in minced garlic and cook for 1 minute.
  7. Add your day old cold rice to a pot with the soy sauce and oyster sauce. Cook on stove top until heated through.
  8. Top vegetable fried rice with crispy tofu. Mix to combine or leave on top for tofu to remain crispy.
  9. Serve and finish with chili oil, sweet chili sauce, or scallions.
