Mash your ripe bananas in a large bowl, then add sugar, melted butter, eggs, and vanilla extract.
Whisk wet ingredients until combined and set aside.
In a separate bowl, mix together flour, baking soda, baking powder, salt, and cinnamon.
Add combined dry ingredients to wet ingredients. Fold together just until combined, don't over mix.
In a loaf pan, spray with cooking oil or butter and pour batter until ½ way full.
Smooth batter evenly with a spatula and set aside.
For the maple pecan topping, add butter chopped pecans, maple syrup, sugar, cinnamon, and salt to a sauce pan.
Caramelize on low heat until butter and sugar are melted, and mixture just starts to bubble.
Remove maple pecan topping from the heat and spoon on top of banana bread batter evenly.
Place loaf pan under a baking tray before placing in the oven!
Bake banana bread in the oven at 350℉ for 60-75 minutes until fully cooked or until a toothpick comes out clean.
Let cool completely and remove from loaf pan to serve.
