Maple Pecan Banana Bread

Method
- Mash your ripe bananas in a large bowl, then add sugar, maple syrup, melted butter, eggs, and vanilla extract.
- Whisk wet ingredients until combined and set aside.
- In a separate bowl, mix together flour, baking soda, baking powder, salt, and cinnamon.
- Add combined dry ingredients to wet ingredients. Fold together just until combined, don't over mix.
- In a loaf pan, spray with cooking oil or butter and pour batter until ½ way full.
- Smooth batter evenly with a spatula and set aside.
- For the maple pecan topping, add butter chopped pecans, maple syrup, sugar, cinnamon, and salt to a sauce pan.
- Caramelize on low heat until butter and sugar are melted, and mixture just starts to bubble.
- Remove maple pecan topping from the heat and spoon on top of banana bread batter evenly.
- Place loaf pan under a baking tray before placing in the oven!
- Bake banana bread in the oven at 350℉ for 60-75 minutes until fully cooked or until a toothpick comes out clean.
- Let cool completely and remove from loaf pan to serve.
