Method
Make flatbread dough
- In a large bowl combine the warm water, honey, and yeast.
- Let sit for 5–10 minutes until foamy.
- Add olive oil, flour, and salt. Mix with a wooden spoon until a ball starts to forms.
- In an electric mixer or on a floured surface, knead dough for 8–10 minutes until smooth and elastic.
- Transfer to a lightly oiled bowl, cover, and let rise for about 1 hour in a warm area, or until doubled in size.
Build the flatbread
- Preheat oven to 475℉ and prepare a sheet tray by lightly greasing it with olive oil.
- Punch down the dough. Roll into an oval or rectangle to fit the size of your sheet tray.
- Brush the edges of the flatbread lightly with olive oil about ½ inch for the crust.
- Spread the whipped feta evenly over the dough, leaving a ½-inch border.
- Arrange the peach slices across the flatbread. Nestle pieces of prosciutto between the peaches. Lightly drizzle olive oil and fresh cracked black pepper over the flatbread.
- Bake in the oven for 15-18 minutes until the flatbread and peaches are golden brown.
- In a small cup, mix together the honey and hot sauce and drizzle over the flatbread.
- Finish with micro-greens and crumbled feta, slice flatbread evenly and serve warm.
