Creamy Cajun Chicken & Grits

Ingredients
  

Cajun Chicken
  • 8 chicken thighs washed
  • 3 Tbsp cajun seasoning
  • 1 small tab butter
  • 1 tsp olive oil
Creamy Cajun Sauce
  • 1 small tab butter
  • 1 small yellow onion diced
  • 1 bell pepper diced
  • 1 Tbsp garlic minced
  • 1 Tbsp cajun seasoning
  • ¾ cup heavy cream
Creamy Grits
  • 1 cup heavy cream
  • 3 cups water
  • 1 cup dried grits
  • ½ cup grated parmesan cheese
  • Butter to taste

Method
 

  1. Wash your chicken thighs and season with cajun seasoning.
  2. Melt butter in a skillet with olive oil and sear chicken on both sides until browned and fully cooked. Set aside and let cool.
  3. Chop chicken into bite size pieces.
  4. In the same skillet, melt butter and add your diced onion, bell pepper, minced garlic, and cajun seasoning.
  5. Sauce until golden brown and vegetables are cooked.
  6. Add chopped chicken and ¾ cup heavy cream, and cook until creamy sauce thickens.
  7. For the creamy parmesan grits, mix 1 cup heavy cream to 3 cups water and bring to a boil.
  8. Which in dried grits to boiling liquid and reduce the heat to a simmer. Cook until all the liquid is almost gone.
  9. Turn off heat and mix in the parmesan cheese and finish with butter.

Notes

If you do not have cajun seasoning, you can mix together 1 tsp seasoning salt, 1/2 tsp black pepper, 1/2 tsp onion powder, 1/2 tsp garlic powder, 1/2 tsp smoked paprika, and 1/4 tsp chili powder.
