Strawberry Peach Summer Salad with Honey Roasted Almonds and Balsamic Vinaigrette

Ingredients
  

Honey Roasted Almonds
  • 2 cups almonds crushed
  • 2 Tbsp honey
  • 1 Tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp cinnamon
  • pinch of cayenne pepper
Balsamic Vinaigrette
  • cup balsamic vinegar
  • 2 Tbsp maple syrup
  • 1 tsp dijon mustard
  • 1 tsp minced garlic or garlic powder
  • Salt and pepper to taste
  • ½-¾ cup olive oil
Strawberry Peach Salad
  • 5 cups mixed greens and kale
  • 1 cup cherry tomatoes quartered
  • 1 cup strawberries diced
  • 1 cup peaches diced
  • ¼ cup blue cheese crumbles

Method
 

Making the honey roasted almonds
  1. In a small sauce pan, mix honey and olive oil on low heat until it starts to bubble.
  2. Remove from heat and mix in almonds, salt, cinnamon, and cayenne pepper.
  3. Line sheet tray with parchment paper and evenly layer almond mixture. Bake at 325℉ for 10-12 minutes and mix half way through baking. Let cool completely.
Prepare the homemade balsamic vinaigrette
  1. Mix balsamic vinegar, dijon mustard, maple syrup, salt, pepper, and garlic in blender.
  2. Slowly drizzle in olive oil and whisk fast to emulsify and adjust taste to your liking.
Build the summer salad
  1. Dice the cleaned strawberries and peach, and quarter the cherry tomatoes.
  2. Serve in a salad bowl with layered mixed green. Toss salad in balsamic vinaigrette, diced fruit, honey roasted almonds, and blue cheese crumbles.
