Strawberry Peach Summer Salad with Honey Roasted Almonds and Balsamic Vinaigrette

Method
- In a small sauce pan, mix honey and olive oil on low heat until it starts to bubble.
- Remove from heat and mix in almonds, salt, cinnamon, and cayenne pepper.
- Line sheet tray with parchment paper and evenly layer almond mixture. Bake at 325℉ for 10-12 minutes and mix half way through baking. Let cool completely.
- Mix balsamic vinegar, dijon mustard, maple syrup, salt, pepper, and garlic in blender.
- Slowly drizzle in olive oil and whisk fast to emulsify and adjust taste to your liking.
- Dice the cleaned strawberries and peach, and quarter the cherry tomatoes.
- Serve in a salad bowl with layered mixed green. Toss salad in balsamic vinaigrette, diced fruit, honey roasted almonds, and blue cheese crumbles.
