Barbecue Chicken Pasta Salad

Ingredients
  

Barbecue Chicken Pasta Salad
  • 6 chicken thighs boneless and skinless
  • Barbecue sauce
  • 1 box fusilli pasta cooked and chilled
  • 1 ear of corn
  • 1 large cucumber diced
  • ½ medium red onion diced
  • 1 pint cherry tomatoes quartered
  • ¼ cup chopped chives
Dressing
  • 1 cup mayonnaise
  • cup dijon mustard
  • ¼ cup sweet relish
  • Half a lemon juiced
  • 1 tsp seasoning salt
  • ½ tsp black pepper
  • 1 tsp smoked paprika

Method
 

  1. Clean your chicken thighs and brush them in barbecue sauce. Cook the chicken thighs on the grill or bake in oven on a sheet pan.
  2. When barbecue chicken is fully cooked, let cool completely. Chop into bite size cubes and set aside.
  3. For the pasta salad, add the cooked and chilled pasta to a large bowl. Dice your red onion and cucumbers, quarter your cherry tomatoes, and shuck your corn. Add your vegetables to the bowl. Chop the chives, add to the bowl, and mix all ingredients together.
  4. Add barbecue chicken cubes to the bowl and mix.
  5. In a small bowl, combine the mayonnaise, dijon mustard, sweet relish, lemon juice, salt, pepper, and smoked paprika.
  6. Add dressing to the pasta salad and toss until evenly combined. Add more barbecue sauce to your taste and serve chilled.
