Ingredients
  

Spiced Carrots
  • 2 lbs carrots (rainbow or regular, peeled, trimmed, and quartered lengthwise if thick)
  • 2 Tbsp olive oil
  • 2 Tbsp honey
  • 1 tsp cinnamon
  • 1 tsp dried thyme
  • ½ tsp salt
  • ¼ tsp nutmeg
  • ¼ tsp black pepper
  • ½ cup chopped pecans
Honey Whipped Feta
  • 1 cup feta cheese crumbled
  • 2 Tbsp honey
  • 2 Tbsp milk
  • 1 tsp olive oil
  • 1 tsp dried thyme
  • ½ tsp salt
  • ½ tsp black pepper

Method
 

  1. Wash, trim, peel, and quarter your carrots lengthwise.
  2. On a tray, lay your carrots flat and drizzle oil, honey, and spices.
  3. Combine carrots and seasonings well. Layer on a parchment lined sheet tray.
  4. Bake at 350℉ for 15-20 minutes or until fork tender, flipping halfway through.
  5. Remove from oven and sprinkle chopped pecans over carrots and bake for another 5 minutes.
  6. For the honey whipped feta, add the feta cheese crumbles, honey, milk, olive oil, dried thyme, salt, and pepper to a blender or food processor.
  7. Whip the feta sauce until smooth and creamy.
  8. Serve the roasted spice carrots and pecans on a platter and drizzle the honey whipped feta over. Finish with chopped parsley for a garnish.
