“When he sees all that is accomplished by his anguish, he will be satisfied. And because of his experience, my righteous servant will make it possible for many to be counted righteous, for he will bear all their sins. I will give him the honors of a victorious soldier, because he exposed himself to death. He was counted among the rebels. He bore the sins of many and interceded for rebels.”
-Isaiah 53:11-12 NLT
These Gingerbread Molasses Protein Pancakes are warm, spiced, and perfectly cozy, making them a comforting yet nourishing breakfast option. Make yours with your favorite protein pancake mix, I went with Kodiak Cakes Buttermilk Pancake mix. The rich molasses and classic gingerbread spices brings a festive flavor to enjoy before and after the holidays. With notes of cinnamon, ginger, and clove all throughout the pancakes while still being fluffy and filling. These pancakes feel indulgent but are packed with protein to keep you full and energized. They’re perfect for winter mornings, post-workout breakfasts, or a festive weekend brunch!

Ingredients
Method
- In a large bowl, mix together the molasses, milk, egg, and vanilla.
- Add in protein pancake mix, spices, and pinch of salt. Mix but don't overtax (a few lumps are fine).
- Let the batter sit for 2-3 minutes to thicken.
- Heat a skillet over medium-low heat with butter.
- Scoop ¼ cup of batter and let cook until edges start to brown and bubble (about 2 minutes per side).
- Serve pancakes warm with tabs of butter, a dollop of whipped cream, cinnamon, and maple syrup.

For the pancake recipe I wonder if I substitute almond flour for Kodiak flour if would lose the fullness of the pancake. After all almond flour is a much lighter option. Your thoughts?
Good question! You’re right, almond flour is lighter than a protein pancake mix. If you want to use almond flour instead, I recommend doing 3/4 cup almond flour and 2 eggs instead of one. It will have a different texture to it than using a protein pancake mix, and won’t be as filling. Let me know how it comes out!
