Made with thick Greek yogurt, grated cucumber, fresh dill, and lemon juice, and more olive oil. This sauce ties the gyro all together with a creamy, tangy finish that tastes like a trip back to the Greek islands.

Ingredients
  

Chicken Marinade
  • 6 chicken thighs skinless and boneless
  • 3 Tbsp olive oil
  • ½ lemon juiced
  • 4 garlic cloves minced
  • 1 Tbsp balsamic vinegar
  • 1 Tbsp dried oregano
  • 1 tsp smoked paprika
  • 1 tsp salt
  • ½ tsp black pepper
Homemade Tzatziki
  • 1 cup Greek yogurt
  • ½ large cucumber (or 1 thin cucumber)
  • 2 garlic cloves minced
  • cup fresh dill chopped
  • ½ lemon juiced
  • 1 Tbsp olive oil
  • Salt and pepper to taste
Gyro Ingredients
  • 1 large tomato sliced
  • ½ red onion sliced
  • 2 cups shredded lettuce
  • French fries optional
  • 6 pita bread warmed

Method
 

Prepare the chicken
  1. In a large bowl, mix together all the ingredients for the marinade, excluding the chicken.
  2. Toss your cleaned chicken thighs into the bowl.
  3. Mix well, cover in plastic, and marinade for at least 1 hour or overnight in the refrigerator.
  4. Heat a large skillet on medium heat, and cook the chicken thighs on both sides until golden brown. Make sure chicken is fully cooked or continue to cook in the oven at 350℉.
  5. Set chicken aside and let cool completely. Once cooled, slice chicken into strips.
Making the homemade tzatziki
  1. Grate the cucumber and blot excess liquid in paper towels.
  2. In a medium bowl, mix the grated cucumber, greek yogurt, minced garlic, lemon juice, chopped dill, olive oil, salt, and pepper.
  3. Mix thoroughly until combined and adjust seasoning to your taste.
Build your gyros
  1. Air-fry French fries and prepare your vegetable toppings for the gyro
  2. Assemble the Greek chicken gyro on warmed pita bread, then add tzatziki, crispy fries, sliced chicken, lettuce, onions, and tomatoes. Garnish with more dill or feta cheese.
