I know I can’t be the only one who sometimes has a sweet craving for breakfast. This Banana Foster Oatmeal brings sweet, creamy, and warm all into one bowl. Inspired by the classic dessert, this version transforms simple pantry ingredients into a cozy breakfast that’ feels special without being complicated’s very easy to make.

I used an overripe banana for this dish but it’s not required to make this banana foster delicious, your banana can be in any ripeness condition. Caramelize them with brown sugar and butter the rich sauce begins to form. The oats will absorb all of that flavor once added to the pan.

What makes this recipe especially nice is how easily it comes together. Everything cooks in one pan, and the caramelized bananas are soft and bursting with flavor when you take a bite of it. It makes the oatmeal taste much more indulgent than it actually is. Oatmeal, for me, is always perfect for slow winter mornings, but simple enough to make on a busy weekday when you want something more satisfying than a quick bowl of cereal.

Ingredients
  

  • 1 banana sliced
  • 1 tsp butter
  • 1-2 Tbsp brown sugar
  • 1 cup rolled oats
  • 1-1½ cup milk of choice
  • ½ tsp cinnamon
  • Pinch of nutmeg
  • Pinch of salt
  • ½ tsp vanilla extract

Method
 

  1. Heat a small skillet or saucepan over medium low heat and melt your butter.
  2. Sprinkle brown sugar over melted butter and add sliced bananas in a single layer.
  3. Caramelize the brown sugar and bananas over medium low to low heat for 4-5 minutes, do not flip or touch.
  4. In a small bowl, add rolled oats, cinnamon, nutmeg, salt, vanilla extract, and milk.
  5. Mix oatmeal together well and pour over the banana foster.
  6. Spread the oatmeal out evenly in the pan and allow it to cook, do not stir.
  7. Once oats have absorbed milk and cooked through, remove from heat.
  8. Serve banana foster oatmeal by scooping out oatmeal and flipping into a bowl to reveal the caramelized bananas. Serve warm.
