You can use fresh or frozen blueberries for this recipe, both will have the sweet, juicy berry flavor. It will bake down into a jammy filling, topped with a golden, homemade granola crumble that adds just the right crunch.

Ingredients
  

Blueberry Filling
  • 2 cups frozen or fresh blueberries
  • 1 to 2 tsp lemon juice
  • 1 Tbsp cornstarch
  • 1 Tbsp water
  • pinch of cinnamon
Granola Crumble
  • ½ cup granola
  • 1 Tbsp chia seeds optional
  • 1 Tbsp hemp seeds optional
  • ½ tsp cinnamon
  • 1 Tbsp honey
  • ¼ cup crushed nuts
  • 1 Tbsp peanut butter

Method
 

  1. Add blueberries, lemon juice, cinnamon, and cornstarch to an oven safe bowl. Mix until fully combined, then add water. Mix and set aside.
  2. In a separate bowl, add rolled oats, hemp seeds, chia seeds, cinnamon, crushed nuts, honey, and peanut butter. Mix until combined.
  3. Layer granola crumble over blueberry filling and bake at 350℉ for 15-20 minutes until blueberries are soft.
  4. Add warm with Greek yogurt and honey drizzle.
