Blueberry Granola Crumble

I know I’m not the only one who dreams of pie for breakfast. This Blueberry Granola Crumble is the closes thing to it! There’s something so comforting about a warm fruit crumble that’s bubbling with blueberries. This crumble has a golden crisp homemade granola topping and can be topped with yogurt and honey.

Blueberries are one of my favorite fruits to bake with because they become wonderfully jammy as they cook while still holding onto their bright, naturally sweet flavor. During the summer months, when blueberries are at their peak, I add a touch of lemon juice and cinnamon which brings the warmth to this breakfast dish.

The blueberry pairs perfectly with the granola crumble. Honestly (and this is my complete opinion) the best portions to have with any breakfast is a fruit and a light carb. The oats in the crumble will help fill you up, but what’s so great about this breakfast is the fiber and protein in the granola as well. I like to pack my homemade granolas with both peanut butter and crushed nuts. Any nut butter or crushed nuts that you have on hand will go great in this. And adding chia seeds and flax seeds adds an immense more fiber and other nutrients. You can add in maple syrup or honey for that extra sweetness, but if you’re trying to reduce added sugars in your breakfast, the sweeteners are optional!

Serve it warm with a dollop of vanilla Greek yogurt and enjoy it with your morning coffee. Because this crumble uses simple pantry staples alongside fresh blueberries, it’s an ideal recipe for everyone. There’s no complicated techniques, just fresh fruit filling, a delicious crumbly granola, and a little time in the oven.

Ingredients
  

Blueberry Filling
  • 2 cups frozen or fresh blueberries
  • 1 to 2 tsp lemon juice
  • 1 Tbsp cornstarch
  • 2-3 Tbsp water
  • pinch of cinnamon
Granola Crumble
  • ½ cup rolled oats
  • 1 Tbsp chia seeds optional
  • 1 Tbsp hemp seeds optional
  • ½ tsp cinnamon
  • 1 Tbsp honey
  • ¼ cup crushed nuts
  • 1 Tbsp peanut butter

Method
 

  1. Add blueberries, lemon juice, cinnamon, and cornstarch to an oven safe bowl. Mix until fully combined, then add water. Mix and set aside.
  2. In a separate bowl, add rolled oats, hemp seeds, chia seeds, cinnamon, crushed nuts, honey, and peanut butter. Mix until combined.
  3. Layer granola crumble over blueberry filling and bake at 350℉ for 15-20 minutes until blueberries are soft.
  4. Add warm with Greek yogurt and honey drizzle.
