Summer dinners don’t have to be complicated, and this Peach Balsamic Chicken with Summer Roasted Vegetables is proof. Made with juicy chicken breasts, a sweet and tangy homemade peach balsamic glaze, and a colorful medley of roasted seasonal vegetables, this recipe celebrates the very best flavors of summer in one beautiful meal.
One of my favorite parts of cooking with the seasons is letting fresh produce take center stage. During the summer months, farmers’ markets and grocery stores are overflowing with ripe peaches, sweet corn, zucchini, yellow summer squash, tomatoes, and crisp green beans. Instead of hiding those ingredients behind heavy sauces, I’m making this recipe to allow them to shine together in a balanced, comforting dinner.
The star of the dish is the homemade peach balsamic chicken. Fresh peaches simmer with balsamic vinegar, honey, garlic, and a touch of Dijon mustard to create a glossy sauce that’s equal parts sweet, tangy, and savory. As it coats the chicken, the sauce caramelizes slightly, creating a rich depth of flavor.
The roasted vegetables make this meal just as memorable. Zucchini, yellow squash, green beans, sweet corn, and cherry tomatoes roast until lightly caramelized, concentrating their natural sweetness while maintaining their vibrant colors. A sprinkle of Italian herbs and olive oil is all they need to become the perfect side dish for the glazed chicken.

Peach Balsamic Chicken with Summer Roasted Vegetables

Method
- Preheat oven to 425°F.
- In a large bowl, toss the zucchini, yellow squash, green beans, corn kernels, and cherry tomatoes with olive oil, oregano, thyme, salt, and pepper.
- Spread onto an even layer on a large sheet tray.
- Roast for 20–25 minutes, stirring once halfway through, until the vegetables are tender and lightly caramelized.
- While the vegetables roast, add the peaches, balsamic vinegar, honey, garlic, Dijon mustard, and red pepper flakes to a medium saucepan.
- Bring to a simmer over medium heat.
- Cook for 10–12 minutes, stirring occasionally, until the peaches soften and the mixture thickens slightly.
- Optional: Use a blender or immersion blender to puree until smooth. Return to the saucepan and simmer another 2–3 minutes until glossy and thick enough to coat the back of a spoon.
- Season both sides of your cleaned chicken breasts with garlic powder, onion powder, paprika, salt, and pepper.
- Grill chicken on a charcoal grill or heat olive oil in a large skillet over medium-high heat on a stovetop.
- Cook chicken for 5–6 minutes per side, or until golden brown and cooked through to 165°F.
- Brush or spoon the peach balsamic glaze over the chicken.
- Allow it to simmer for 1–2 minutes until slightly caramelized.
- Allow chicken to rest for at least 5-8 minutes. Slice chicken and serve with peach balsamic sauce over the top
- Serve warm with roasted summer vegetables on the bottom of the dish and top with the peach balsamic chicken. Serve immediately.
