Ingredients
  

Flatbread
  • tsp active dry yeast (1 packet)
  • ¾ cup warm water (105-110℉)
  • 1 tsp honey
  • 2 cups all-purpose flour
  • 1 tsp salt
  • 2 Tbsp olive oil
Toppings
  • ¾ cup whipped feta
  • 1 ripe peach sliced thinly
  • 4 oz prosciutto
  • ¼ cup crumbled feta
  • 1 Tbsp olive oil
  • 1 Tbsp honey
  • 1 Tbsp hot sauce
  • 1 cup microgreens
  • Freshly cracked black pepper

Method
 

Make flatbread dough
  1. In a large bowl combine the warm water, honey, and yeast.
  2. Let sit for 5–10 minutes until foamy.
  3. Add olive oil, flour, and salt. Mix with a wooden spoon until a ball starts to forms.
  4. In an electric mixer or on a floured surface, knead dough for 8–10 minutes until smooth and elastic.
  5. Transfer to a lightly oiled bowl, cover, and let rise for about 1 hour in a warm area, or until doubled in size.
Build the flatbread
  1. Preheat oven to 475℉ and prepare a sheet tray by lightly greasing it with olive oil.
  2. Punch down the dough. Roll into an oval or rectangle to fit the size of your sheet tray.
  3. Brush the edges of the flatbread lightly with olive oil about ½ inch for the crust.
  4. Spread the whipped feta evenly over the dough, leaving a ½-inch border.
  5. Arrange the peach slices across the flatbread. Nestle pieces of prosciutto between the peaches. Lightly drizzle olive oil and fresh cracked black pepper over the flatbread.
  6. Bake in the oven for 15-18 minutes until the flatbread and peaches are golden brown.
  7. In a small cup, mix together the honey and hot sauce and drizzle over the flatbread.
  8. Finish with micro-greens and crumbled feta, slice flatbread evenly and serve warm.
