Ingredients
  

  • 1 cup pumpkin puree
  • 2 cups rolled oats
  • cups milk of choice
  • 2 eggs
  • ¼ cup maple syrup
  • 2 Tbsp melted butter
  • 1 tsp cinnamon
  • ¼ tsp ground ginger
  • ¼ tsp nutmeg
  • 1 tsp vanilla extract
  • tsp baking powder
  • ¼ tsp salt
  • ½ cup Greek yogurt
  • Maple syrup for top

Method
 

  1. Preheat oven to 375℉ and lightly grease a small casserole or baking dish.
  2. In a large bowl, whisk together the pumpkin puree, eggs, milk, maple syrup, vanilla, and melted butter until smooth.
  3. Add in the oats, baking powder, salt, cinnamon, ginger, and nutmeg.
  4. Fold in any optional add-ins like chopped nuts or chocolate chips.
  5. Pour the mixture into the baking dish and spread evenly.
  6. Bake for 25-30 minutes or until the center is set and edged are golden.
